Recipe: Chickpea Lettuce Wraps
Serves: 6 wraps
Ingredients:
1 can chickpeas, drained + rinsed 1 can organic black beans, drained + rinsed 1 medium avocado 1 cup cooked quinoa ¼ cup chopped cilantro Juice of half a lime Pinch of sea salt Pinch of black pepper 1 head Boston Bibb lettuce or romaine lettuce Optional toppings: sliced cherry tomatoes, onion, and chopped cilantro..
1. Add the chickpeas and avocado to a large bowl. Mash with a potato masher or fork until chickpeas are broken up and avocado is creamy.
2. Add black beans to avocado mix. Once everything is blended well, stir in quinoa, cilantro, and lime juice.
3. Fill lettuce "tacos" with mix.
4. Season with salt, pepper, and additional cilantro for taste.
